Sunday Sweetness: Chocolate Lava Cakes

Chocolate. It pretty much makes life worth living. My life, anyway. And, ever since my cake-tastrophe, I’ve been wanting to ease my way back into baking a cake from scratch. When I came across this recipe for Lava Cakes – from Martha – it seemed relatively simple so I figured no time like the present, right?

I should point out that “present” was actually 9 o’clock at night – so my family was eating these bad boys at 10 in the evening. Such sports, they are. The majority of my week was spent moving my mother from one apartment to another. That really ought to be a post all by itself because it was that much fun. No. Seriously.

Back to the topic at hand:

Chocolate Lava Cakes

4 tablespoons unsalted butter at room temperature, plus more for cupcake pan
1/3 cup granulated sugar, plus more for cupcake pan
3 large eggs
1/3 cup all-purpose flour
1/4 teaspoon salt
8 ounces bittersweet chocolate, melted (I used a heat-proof bowl on top of a pan with simmering water.)
Confectioners’ sugar, for dusting
Whipped cream, for serving

Preheat oven to 400 degrees. Generously butter 6 cups of a standard muffin tin. Dust with granulated sugar, and tap out excess. Set aside.

With an electric mixer, cream the butter and granulated sugar until fluffy. Add eggs one at a time, beating well after each addition. With the mixer on low speed, beat in flour and salt until just combined. Beat in chocolate until just combined. Divide batter evenly among prepared muffin cups.

Place muffin tin on a baking sheet; bake just until tops of the cakes no longer jiggle when the pan is lightly shaken, 8 to 10 minutes. Remove from oven; let stand 10 minutes. The centers of the cakes will still appear “wet”, even when they’re done.

To serve, turn out cakes, and place on serving plates, bottom sides up. Dust with confectioners’ sugar, and serve with whipped cream, if desired.

Not only were these super easy to make – they were delicious! This is the perfect “Realist Mom” dish – it looks super complicated, but it really isn’t. These little bits of chocolate heaven would certainly “wow” at your next dinner party or get together – especially when your guests get a look at the gooey chocolate middle.
